Oh, forgot "I've been everywhere man" Johnny Cash

That's a fun one to try and sing real time.

There are hundreds of tunes I could put here - but right now this is my favorite. I saw Rick on tour with TE about 10 years ago and got a chance to chat with him for a few minutes. He was a very kind, soft spoken and humble guy. His voice was one of the most impressive I've ever seen live - he really knew how to work a mic

My previous post was meant to be a reply to your original suggestion, which was great.

Great replies, everyone. You've reminded me of some good ones I'd forgotten about. As soon as I saw Paper Moon, I had to reach for my old Yammy and start it up.

And if I can add a few more:

Four Strong Winds (Ian Tyson/Neil Young)
Radio Song (Dillard and Clark)
All Your Stories (Jesse Winchester)

Default I've been playing a lot

...of songs by The Band. They really push you to be soulful in your singing because you sound stupid if you don't. The guy I've been playing with recently also does a lot of noodling on those Robbie Robertson songs.

And as always, The Beatles are a very deep well of finely-crafted pop songs. Even back to the early era their chord selection and harmonies really make playing fun.
