Default Recommend some fingerstyle songs?

My goal since lockdown has been to work up enough fingerstyle arrangements of songs most people know (arrangements with melody, no singing) to be able to pick up some side gigs when all this is over. It's going pretty good, but I keep picking really difficult pieces with a lot of variations and it's taking a long time. I need to add some easier stuff to the mix.

Got any suggestions? I'm not talking beginner level, just arrangements that won't require a major commitment to be able to perform competently and that are fun for folks to listen to, and, preferably, songs they already know.

I already have a brewery that does (well, did and hopefully will do again) a weekly happy hour. 2 hours, breaks when I want to. That should give you an idea of the audience.

Thanks for your help.

I've posted these before. Here they are again.
John Fahey: In Christ There is No East or West. And Big Bill Broonzy: Hey Hey.

Check out "Tangerine Puppet" by Donovan - easy to play and sorta cool - I've been playing it since the 60's.
Also, Dave Von Ronk's version of "St Louis Tickle" is not very difficult
Windy and Warm
Anji
Listen to Bunny Barnes on YT - she does some pieces that are fairly easy
Nine Pound Hammer and I Am a Pilgrim
Freight Train
Last Steam Engine Train
Poor Boy a Long Way From Home
Doc's Guitar is not real hard, just fast
Lot of older Chet tunes are fairly easy: Copper Kettle, Black Mountain Rag, etc.

Anything played (finger style) by Lindsey Buckingham,

Leave out the lyrics and the tune will still be noticeable.

Default Walk Away Renee

I've been meaning to work on this. Found this video on Youtube. It has a link to a tab, too.

You didn't mention a genre, but I'll toss out a couple of blues tunes with recognizable melodies--Deep River Blues and Hesitation Blues. Toby Walker has some pretty user friendly versions on his website.

Josh Turner (not the country singer) on YouTube has some great arrangements including this one of "My Baby Just Cares for Me"...:

Try some Lindsay Buckingham stuff. Very unorthodox style but well worth exploring.
