Anticipating a big snow storm tonight. Then bitter cold. Winter is clobbering us.

Wanted something simple and quick.
Mmmmm?

Huevos rancheros. I haven't had that in some time. Hit the spot.

Some sort of lovely chicken/spinach/sundried tomato/pasta concoction in the Instant Pot.

Lid just came off - smells heavenly

My wife started us on a keto diet today. Evidently dinner is going to be some type of Asian stir fry cabbage and ground beef. Also lunch tomorrow too.

Pizza, (homemade dough if course) w/ricotta, sautéed leeks, garlic & shi#ake mushrooms.
Meatless about 3-4 nights a week.
Shepherds pie sounds fine too!

Chilli con carne on potato and pumpkin.

Years ago my wife dropped her plate of this and it landed upside down on the living room floor.

So it's referred to now as 'chilli con carpet'.

That’s funny! Haven’t heard it called chili con carne since my mom called it that growing up! Haven’t had it con carpet yet!

Pork tenderloin tacos, rolled in flour tortillas, w/ sour cream, cilantro, & salsa, and re-fried black beans on the side... Extra sweet onions & jalapeno peppers.... Washed down by a pilsner barley pop.....

Late to the dance, but Saturday night about 9:00 my wife placed a gorgeous beef roast in the slow cooker. Sunday morning before church she added potatoes and carrots. All told the beef was in the cooker for about 15 hours and was incredibly tender. Had that and some amazing double dinner rolls. So fine!
