How hard is it to unstring and restring a guitar?
By that I mean, I want to take off the strings in order to take down the saddle some, but my strings are pretty new so I want to put them back on. They've already been cut so there isn't much extra string. Is it going to be difficult to put them back on?

Does the bridge have pins? Just loosen them up enough to pull the pins and ball ends. Then you can get the saddle out.

Capo around 7th, 8th fret or so first...

Helps keep a little more string tension on the tuners so your wraps don't just spring loose...

The capo acts as a clamp and holds the strings neatly in order instead of them just flaying about wildly.

Capo on 4th fret .Loosen strings by pulling up them or around the 12 th fret approx while you unwind the strings at the tuner.Do one string at a time.
Loosen enough so the strings are slack enough to have access to the saddle.Pull out bridge pins and saddle.Ive performed it many times with new strings cut short at the headstock.Fairly quick.Now sanding down the saddle to a specific height can be time consuming ..... I just swapped the plastic saddle out for a new Tusq one in my Yamaha. I put my capo at the 10th fret and loosened the strings enough to pop out the bridge pins and remove the strings so I could take out the old saddle. Yes the capo keeps the strings from flopping all over.
