A good number of trad Appalachian fiddle tunes are in mixolidian or aeolian as well as ionian. So your chord changes may not follow an expected pattern. You do have to learn the tunes and the genre.

Some old time sessions will expect the guitist to play "straight". A boom chick rhythm, bang on time, with no variation.

Other sessions may allow you to work from DADGAD. This can give you options when working with modal tunes. The bottom tune in my signature below is an example of this supporting a primarily aeolian tune that is in 3 parts and shifts mode.

As has been said, the guitar is low in the pecking order at an old time session.
