The quarter inch out from the RedEye (the FX loop out) will work fine. I did this all the time at open mics when there was just a guitar cord option. But you do loose some sound quality. Not a huge deal.
But since this thread started I've switched to SunnAudio. Others have too. You loose the boost switch, but gain a TRS quarter out as well as a bass control. Plus it just sounds better.

Yes, they are interchangeable according to the Red-Eye manual.

If you're looking for a simpler cheaper RedEye - the Radial SB-4 is phantom powered, small, has a switchable HPF and phase switch, a 5G input impedance, and runs about $80. I've tried it with my Guild which has their AP-1 preamp so it's already buffered and liked it. JJB install in progress this week.

I had SunnAudio build me a blender DI in a box for my open mic. We've had it for several months now, and have run probably fifty different guitars through it. Many had K&K pickups. They sounded great. Even the cheapest undersaddle pickups in those $300 guitars show much improvement, we just turn the gain down.
The SunnAudio signature sound is just so studio quality. We plug electric guitars into it too. Much less sterile than going direct to the board. But Dazzos sound the very best.

Impedance doesn't have to "match". What you need for K&Ks as well as most passive pickups is a high input impedance, 1M or more, usually. Beyond that, it really makes no difference. The Sunnaudio preamp has a high input impedance, as does almost any piece of gear you can find intended for acoustic instruments, and will work fine with K&Ks.

I am configuring a new pedal board and decided to use the Red-Eye. I really love how clean it sounds and the clean boost is very natural and easy to adjust. I use that for acoustic solo's or quieter playing.
Here is a pic of a possible layout for my new acoustic pedal board. I might replace the tuner with a Shure GLXD wireless since it has a tuner built in as well.

I have the ability to make my own Evidence audio monorail jumpers to connect the pedals in the logical sequence.
