Depends on your situation I guess, having a young son and another one on the way I really only have time for one guitar but currently have four!
That is the absolute maximum for me. Only 2 of my 4 I class as my main guitars, a furch om32 and a martin 00-28vs, Im pretty much set with those two. My other guitar is a martin lxm, a gift from my wife which I hope to pass on to my son to learn to play and a battered yamaha fg which sadly just sits in the loft, I may have to give that old yammie a bit of tlc!

Three is where I want to end up. I'll likely swap the dread for a GA or mini jumbo and the Yamaha for a 00 of some kind. Then I'm good.
As for need, I could get by with just the OM. Spruce over rosewood OM is a sweet combo.

5 - One classical for home, one to play away from home, One steel string for home, one to play away from home, and a 12-string just because some pieces scream out to be played on a 12-string. I have 8, so need has nothing to do with it. I would be willing to let 2 of them go (one classical and one steel.) Obviously the two that stay in the house are better than the two that get to go travelling.

How many guitars do you need?
TMK one of the magazines (don't remember if it was Guitar Player, Frets, Acoustic Guitar, or Guitar World) published an interview with some studio guys about this very subject back around the late-70's - as I recall the basic list read something like this:

Not long after we acquire that one final addition to the collection we realize we're still missing something; something that can only be remedied by acquiring just one more, that's right, just one more guitar. Call it a curse! Call it a blessing. Either way, we're all just one guitar away from the perfect collection and no matter how many guitars we have we'll still be just one away from the perfect collection.
