Hmmm.. I've been playing for 50 years and economy picking is a new one for me too. I just do what seems easiest, which as it turns out is mostly economy.

It is easiest for me too, and I suspect a lot of people do it naturally -- it doesn't make a lot of sense to jump down over a string just to up-pick it, unless you've specifically learnt to alternate pick. At least not to me. But we're all different

I suspect these things only got specific names on the electric guitar side because people needed to be able to discuss the fastest way to play and it's easier to talk about things once you've named them.

On the acoustic side I suspect people mostly don't care and do whatever feels good
