On my first date with my wife, I took her to hear a guitarist who, by chance, played a seven string acoustic guitar. That was more than forty years ago. The guitarist was a Canadian fellow named Lenny Breau, and was the only jazz player to play seven strings.

Pretty sure there have been quite a few jazz players to play a 7 string.

George Van Eps has been mentioned as well as his disciple Bucky Pizzarelli and his son John, both wonderful Jazz guitarists.

Lenny Breau played a unique 7 string that had an added treble string rather than an extra bass string. When he played in Hamilton in the sixties or seventies, he told us (the audience) that his treble string was nylon fish line.
