Preparing for the coldest weather in 30 years here in Chicago, made a huge pot of soup to go through the week, but tonight it's kids choice, so chicken parmesan...

Just north of you Mr. B. Not at all happy with the Polar Vortex.

It snowed all night, still snowing. I got up very early to go to work. Nothing plowed, not even the freeways.

The soup is a good idea given the week ahead of us. Sigh....

Yeah, I'm hearing lots of backpedaling today about how Streets and San here in Chicago "couldn't keep up with the snowfall" or whatever, but on my 5 mile drive straight down one main road to work today (which usually takes 15-20 minutes and instead took an hour) I didn't see a single plow. So yeah, it's hard to keep up when you're not actually there.

I'm actually gonna swing by the grocery on the way home today and get more soup stuff for a second round...this cold has me concerned a bit. This is the stuff car breakdowns and other nasty things are made of...

Chicken stock is a cinch and comes together pretty quickly. I'll start a stock after dinner and it's ready with enough time to strain it, put it away and clean up the kitchen by bed time. Definitely worth it...

Homemade chili in our (fairly) new InstantPot. For those unfamiliar, it looks like a crock pot, but cooks much faster (we call it the "fast cooker," rather than the slow cooker). Chili took about 30 minutes... we made fall-off-the-bone ribs in about 30-45 minutes.

We had leftovers from Superbowl Sunday last night: Brunswick stew, a traditional game stew from Georgia but much loved in nearby Williamsburg, Virginia, during Colonial days. Ours was based around chicken this time. As a side dish we had homemade Sally Lund bread, an extremely light batter bread baked in a tube pan that originated with French Huguenots and was supposedly made famous by one Sally Lund (Solange Luyon) in Bath, England around 1680 before the recipe was bought by baker William Dalmer. When in Bath, I walked right by Sally Lunn's (at a brisk pace) on my way to a little bookseller up the way that specialized in historic works.

Whatever, it was de-lish.
