My thought was to redo one guitar using mikes. That might be enough to gently distract the ear, vs. having two guitar sounds with the same piezo sheen. Since you are experimenting with IRs, I encourage you to try the Jon Fields/Cuki processes for creating your own IRs specific to your guitars. I've made a few quick IRs with Jon's generator and gotten very usable results. (Of course, ToneDexter is probably the leader in this area, and I use it, but it is an investment in time and money that isn't right for everyone.)

I think your recording sounds very nice. But you can always try it with mics and see which you prefer.
