It’s someone who can pick up a guitar without concern for string spacing, nut width, or string composition, and elicit from the instrument a melodic and entertaining sound.

A musician who transcends the limitations of his instrument to produce the magic we call music, played so beautifully we forget there is a guitar.

Guitarist = One who plays guitar (regardless of skill level or accomplishment), appreciates the instrument, its sound, and has an interest in improving their ability with the guitar.

"Guitarist" implies some level of physical mastery of the instrument, but tells you nothing of the musical abilities.
