Default 6 to 1 or 1 to 6?

Let's settle this once and for all.

I regularly see people write a chord ... let's say an Am ... as x 0 2 2 1 0 and just as regularly see it written 0 1 2 2 0 x. Which is correct?

The first way. Left to right, low strings to high.

Excellent. That way makes more sense to me, but lately I've been on an invitation-only Facebook group associated with a course I'm doing where people often write it the other way around and I've been getting confused.

What has already been posted is standard. Does not mean you won't run into the opposite (as you already found out).

Yep the first way. Just like when you read a chord block diagram, it’s like you’re looking at the guitar vertically.

That, just stand the guitar on its end pin and face it and then it is easy to visualize.

The first way, starting with the Low E String. I've never seen it the second way before.

I always been accustomed to 6 to 1, but some people, including the Tasmanian OP drive on the wrong side of the road!!!
