Go for it, John - and be sure to let us see the results.. I have a fair amount of woodworking experience with Hickory (yes, keep 'em sharp to avoid tearout) but have never seen anything like that, never.
Yes, exposed to sunlight, the dark colors fade - which a lot of woods do.
