There are a number of things I would not normally ever consider - but maybe I'd compromise if the guitar was good enough in other ways (never say "never"). But I bet I wouldn't.
1) cutaway 2) asymetrical or cheap-looking appearance, mismatch of colors 3) playabiity - too wide or too narrow a nut, uncomfortable neck or body 4) barndoor electronics

Fake wood on the fretboard. I love sustainability, but I want real wood on my fretboard.

At this point, I don’t even think of considering a carbon fibre or ovation guitar.
But spec wise, I don’t think I have one, if it plays, looks and sounds nice then it’s all fine and dandy. |

Never say never, but I don't like the look of a cutaway on an acoustic or the feel of a "baseball bat" neck. I'm pretty tolerant of varying nut widths, string spacing, and body shape. I can see why those things are important to some folks, though.

You realize its incredibly easy to de-gloss a neck with 0000 steel wool? If a guitar is otherwise perfect that's still a "deal breaker"?

Any headstock that ventures too far from the traditional Martin shape and style is a deal breaker no matter who makes it.
Also,top woods other than spruce or perhaps cedar. I love a good burst,but anything close to the yellowish tobacco sunburst is a total turn off.

My deal breakers are, long scale 25.5 or so, and wide string spacing. I can do 1.75 at the nut as long as the spacing is within reason of my short stubbys...

I have lots of things that I like and lots that I don't care about but a sharp V profile neck is a non-starter for me. At the other end I find that I can't play a Taylor or similar neck for more than about 5 minutes before I get pain in my fretting hand. I used to own a couple of Taylors but after that started happening I sold them both. They were both good guitars, too.

For me: cut-aways, fat necks or v-necks, built-in electronics, distressed look imparted by the manufacturer.
