If you mean the Bach Minuet in G that is a fabulous idea. I used to play that on the piano as a kid so it would be fun to learn on guitar.
As for all the other suggestions from everyone -- thanks! You have given me some good things to look into. I really enjoyed the Carulli piece I already learned so another song from him (you suggested "Waltz") could be a nice.
