Part of the difference is the Spruce vs. Addy.
I have an Eastman E 6 OM with Sitka/ Mahogany and it is jangly like your Gibby albeit obviously not the same in terms of volume or bass. I also have an Eastman 00 Addy and Mahogany which sounds like the E 10 in your video in miniature.
Personally, I liked the Eastman, it growled more in the bass, the mids had punch and the notes were woody.
I am a huge fan of Eastman's Addy Tops.
