You only NEED one.
Unless, your primary is a 12. Then you need as many as you need.
As far as tuning woes, I generally stay away from strings that have a .008 octave G.
I also tune to standard, or half a step flat.
Big rule for me with 12’s. Tune the octave G up to pitch last.
Tune it down first.
Since I started doing that, I’ve broken very few octave G strings.
If none of the sets you like come with a .010 gauge G. Buy a load of singles.
