My guess is that the bracing and construction have a lot to do with it.
Bottom line is that one cannot state that one is better than the other.
I fully agree with your post. I recently played a couple of Engelmann/Koa Martins and they were outstanding sounding guitars. I imagine the Goodall is superb. It really is the whole package that has to be heard and appreciated, not just one spec or attribute alone. HOW a guitar is built is REALLY important.
