IMO, one of the drawbacks of a UST is the fact that they have to interfere with the saddle-to-bridge slot physical interface. The string vibration has to get transmitted through the UST to reach the bridge and soundboard. There's really no way it won't affect the acoustic tone. A UST is in the acoustic signal path.

SBT's, however, pick up vibrations on the bridgeplate or soundboard after the string has imparted vibration to it. The SBT goes along for the ride.
