I don’t think you’re over thinking it at all.
IMO mass produced guitars don’t sound alike. One may be fantastic and another quite ordinary. Matching the sound in your head, produced by the one you passed by, could lead to a huge disappointment.
Keep auditioning guitars in person and your likelihood of getting tone like the one you passed on will increase.
