Agree. That’s what I was trying to convey with my use of “Today’s gluten”, but should have expressed myself better.

Another practice that wasn’t done centuries ago is putting gluten into so many food, and non-food, items. It’s amazing the varied amount of places where you can find it.
Is that good? bad? I don’t know the answer. But these days you have to rely on yourself more than ever for proper guidance and to make decisions. Too much hype on all sides of the argument, and then there are always the hidden agendas.
Maybe that’s what the OP was driving at.
