Eastman AC-812 into Rode NT4 stereo mic, into Tascam US-800 a/d interface, into Mac -Garage Band.
I record in a basement office that has a lot of tile and too little carpeting, so I have a problem with sound bouncing off floors and walls. For what it's worth, here's a clip of the sound I can achieve with that fairly simple set up in a not particularly good recording space:
