Try a new guitar in a number of locations, as the room will often influence what you hear. Then, have someone else play it while you listen. Lastly, don't be afraid to come back another day and try it with fresh ears. Ultimately, so much of a guitar's sound is not due to it's wood or construction, but due to the player and fingers/picks.
