Just want some advice on which audio interface to get. I don't want to buy something too cheap as I've heard this can defeat the point in having a good microphone, but then maybe the basic forusrite stuff is good enough for the mic I've purchased already.

You're going to need more than just an interface so the Scarlett line is as good as anything for the money, AFAIK. You're going to want another couple mics, stands, etc. and if you don't know this already, you'll discover quickly that your recordings will probably be less than you hope without acoustic treatment. The sound of your room, in my experience, is a bigger deal than which interface or mics you get.
