I think he uses a thin coat of shellac so as to not impair vibration etc. I guess it's "sealed" rather than finished. I can check.
Rory Dowling in the UK finishes the interior for the same reason - he feels it makes for a "classier" guitar.

Somogyi teaches that as part of his building philosophy, so I'm not surprise his former apprentices do the same! The idea is to slow down the release or absorption of moisture into the wood, so that it is not a sudden change.
I think that Rocklite looks great, and am sure we'll see more of it in the future.
