From the photo, the saddle compensation looks correct IMO. Why would u think the saddle reversed when you changed strings? Unless you took it out, or it fell out (which can happen if the guitar is not flat when all strings removed, no shame in that). If you think or know for sure the saddle came out I'm wondering if there might have been a loose shim under it that also fell out unnoticed...then when u put it back in without the shim the action lowered. It just seems that the problem came on pretty quickly and up and down the fretboard. Granted it could just be a humidity thing, but the saddle looks a tad low to me, again just a rough observation.
