I would suggest getting the Apogee Duet. You will find a lot of uses for it. For example, I use it with my EyeTV and can't think of a better way to burn a DAC in. Record at the highest bit rate you can...I think it is 24/96KHz with the Duet. To prepare it for YouTube then I use Adobe's media encoder. It is pretty slick.
If you plan on burning LPs in the future you can use the Duet, and then with Adobe Soundbooth remove all of the noise. The audio engine used to remove the noise in Soundbooth is incredible. For a couple of hundred bucks more, you will be getting a far more versatile component.
