I have always heard it's best to have matched pairs (same size and speed and preferably same brand) for best performance, but yes it should still work with unmatched pairs.
Yes, I wasn't saying I was going with 64GB. I would likely go with 32GB, which is probably still overkill. 16GB is probably the sweet spot.
