I’m already thinking either a SJ cutaway or deeper bodied Model M (both Florentine, potentially). It’s hard to say! I love both but they have different voices. My Model M is a 4 1/4 deep guitar, I think if I did it with 4.5 and a bevel it would be a good midway point between the SJ and my current model. Would probably do a euro top with rosewood-family back/sides
