It would really depend where I'm at in my guitar buying life in this scenario.

If you mean me today, I'd buy one guitar because I've gone to a number of guitar stores in the last 25 years (since I started getting interested in guitars) and have played a decent variety of instruments so I know what I like.

If you mean me minus that experience (or if a friend who wanted to really get into guitar had $3K to spend for example) I would totally suggest buying two guitars that struck their fancy but were completely different, for example something Martin flavor and something Gibson or Taylor flavor. I'd suggest they live with them both over the course of a year or two and then sell both and buy something upscale with the money from those sales (and some of their own).

Maybe that's crazy but I did a lot of horse trading when I was starting out and don't own any of the guitars I did 10 years ago and am still considering swapping things around more still.
