I've tried different strings - nylon, nyl-gut, carbon, and gut. Really nothing sounds like gut but gut. The nyl-gut strings kind of lean in that direction, but to me, they still sound like nylon strings.
True gut is, of course, expensive. I have a baroque guitar with 5 courses (9 strings) and it costs about $90 to string it. Of course the strings don't corrode, so they sound good longer. Except the treble string, in particular, breaks most often.
