Congrats! You started pretty much nearly the top with your first acoustic. I've owned two 000-28EC's and both were excellent.
For strings, pretty much a personal thing but give the John Pearse PB New Mediums a look. Not as expensive as the Elixirs (which I used to use as well) but they last pretty long. Also, they run a fine line between lights and mediums.
As for next, since you're a big guy at 6'6", a dread seems like a natural. A D-18 will give you a classic huge Martin mahogany tone which will be a great compliment to your 000 rosewood guitar.
