Why not spend $279 and just buy a Zoom H5 (which you can add onto later) and it has a headphone jack, and comes with a basic 2 mic capsule, and you can add modules, plug in XLR or ¼" mics etc.

It'd be as easy (or easier) to manage than recording into an iPad with an interface. You can always record the audio separate and then replace the iPad audio in post processing. Lots of ways to tackle this process.

There is another discussion on this topic in the thread right now (first week Jan 2019) which talks about recording into iOS devices.

Have fun exploring…

The video on the iPad Pro 2018 (newest) is equivalent to the current phones, but last version before this is lacking in the video arena. Good enough for YouTube though.
