I think the equipment used, thickness sanders, tend to lead to most tops being an even thickness, but that isn’t a limiting option for small or solo builders who may alter the thickness in sections in order to acheive sound goals - and thickness differences are pretty small -

Ovation guitar tops are uniformly tapered from top to bottom.

Maximum of .125" at the top tapering down to a minimum of .105" at the bottom for an approximate taper of .020".

The tops are put into a tapered plate that goes through a belt sander.
