Recently, I made exactly an identical video just playing the piece Spanish Romance with two guitars built by the Portuguese luthier José Marques... I came to a conclusion: the sound is different but I can't say which one I like better; there are pieces that I like better than Spruce and others that I like better than Cedar.

ok after watching the second video I went back to the first and have new thoughts...
The cedar has boosted mids sort of like a hog topped guitar. it seems louder and warmer, and is more romantic feeling perhaps old-timey. I think I like it.

Spruce topped guitars really need to watch out for sounding scooped and thin. They have a beautiful voice ideally, but cam also be weak quiet and unbalanced across the strings.
