John Hall of Blues Creek Guitars offers classes in building. Moreso in the Martin vein. Make a guitar as you go. Located in Hegins, PA. He also sells kits w/ full support as you go. He's put up quite a few instructionals on YT that are invaluable to a novice....

Not sure if you've made any decisions yet, but here's a pretty extensive list of lutherie schools from the GAL site. Keep scrolling down and there are schools in Canada as well as a list of international ones.
