If you take a guitar without a truss and put one in, tone is likely to change to some degree.

If a skilled builder makes two guitars, one with the truss, one without, I bet he/she could make them sound equally good (I go for the "equally good" metric since no two guitars sound the same).

Kenny Hill's reply about this was great, and is likely how I'll address the question for my future builds.

He said that Hill classicals included a truss rod for years, and he simply never mentioned it. It was never a discussion point for owners, since it wasn't apparent that it was there at all, and thus never an issue (except for maintenance, where Llewellin's car jack analogy is perfect)
