I serve it with homemade gnocci.

This thread is making me hungry. Y'all got some dang good sounding signature dishes.

My grandmother used to fix chitterlings. Whew! Did the apartment ever stink when she was cooking them. She would clean them real good (I am not sure you can ever clean them enough) and then fry them.

Maple walnut pie.

Think pecan pie but maple and walnut flavored. Thanksgiving dessert.

Penzey’s Spices used to carry it in its catalog--I got mine from King Arthur Flour’s website. You can also find it in Italian groceries--in Chicago, they’re concentrated in the near west suburb of Elmwood Park, along Harlem Ave. (IL 43) from about 2500 N. to North Ave. (1600 N.),

I have a few.

I'm told my pesto is pretty good.
My Chili Verde with Pork and Mango rocks.
I make a mean Evil Jungle Prince with Mock Duck. And Green Curry Shrimp.

I have a few I've created that are pretty good... Salmon Lasagne
And some I've adapted to make my own... Spinach Salad with Roasted New Potatoes and Asiago.

My signature, however, might be my rendition of the Boulder Cork's Lobster Chowder.

Now I'm hungry
