Anything by Stephen Wake.
Most of his youtube videos include links to tab. His arrangements of Celtic tunes are beautiful, and challenging--but not too challenging. Apart from learning to play triplets, you can make enough progress in an hour or two to be able to play something that sounds nice, even if it's only a couple measures of the song.
