Any of the D'Armond "monkey stick" pickups will allow you to slide the pick up out of the way. Tone changes depending on position but you should be able to find a happy medium.

Look for the Guitar Mike or any model other than the Rhythm Chief (a great pickup, but the others sound very close and cost hundreds less!)

Agree w/the Godin recommendation. They're good value.

I wouldn't ever buy an arch-top without a neck pick-up though.
That's just me. You miss out on 1/2 of what the guitar is capable of doing.
