Do you think this was recorded with the mics pictured?

I saw this on TV earlier today and I was thinking "he's moving way too much for that even sound..." So, do you think those mics are picking him up or do you it's coming from a camera mic or something?

Definitely, I think so. He's using two mics. They are condenser mics multi or omni directional and they capt the whole environment. Great Eric Clapton.

Even if they're omni he's moving so much... With my mics set up like that if I move at all it registers. It's less noticeable in stereo but then you have to deal with the voice being slightly to one side and the guitar to the other.

I've been dealt a similar situation and have had to deal with it via pretty violently tracking the volume and EQ up and down with automation. In my case, I would have defied anyone except another engineer to detect it. I will admit that it was an absolute pain in the neck to go in and follow the rocking motions on two or three automation lines.

Yes. Clapton specifically uses condenser mics in studio (Brauner VM-1) and live (Audio-Technica AT4055) to account for his dynamic style of singing. His engineer Richard Collins was quoted as saying he sings off-mic quite a bit, "It's like an art for him."
