Combination of melody, lyrics, excitement level, fun to hear, etc...

Lots of great songs to choose from but for unforgettable lyrics with the perfect acoustical framework my fave is Eric Taylor's "Hemingway's Shotgun"

For me the two songs that come to mind are The Allman Brothers' Little Martha (though I like the Kottke version a little better. But it's just not the original) and Jorma Kaukonen's Embryonic Journey.
