AcousticMusic.Org in Guilford has a great reputation and wonderful instruments try out if it's not too far for you. I have found the people there in credibly knowledgeable and friendly the 4 or 5 times I have been there.

As sayheyjeff2 mentioned, in southern New Haven county, George Youngblood at AcousticMusic.org in Guilford is definitely worth checking out, as is Paul Neri at Neri Lutherie in Clinton.
