As an engineering material composites are stronger, lighter, and more consistent in their properties. That makes them "better" to work with in terms of design and build.

Tone is a subjective thing, and better is in the ear of the beholder. I have played the entire product line (except for the new Savoy) and I can say that eKoa is a very woody sounding material, and even looks a lot like koa wood on the tops given the way that Blackbird lays it up. Just look at pictures of the Farallon ukulele or the El Capitan guitar. They look just as good in person as they do in photos.

Granted, El Capitan is a fairly expensive guitar, but it sounds very much like my nice Taylors - plus all the benefits of composite construction. The Taylor 500's, 700's, and 800's are comparably priced these days.
