Frank Zappa is probably my all time favorite on electric guitar. But there are so many. I like David Gilmore's elegant simplicity, The complexity of Robert Fripp, the fluidity of Jeff Beck, the powerful riff making magic of Iommi, the funky chops of Jimmy Nolan and so on and on and on and on...

James Calvin Wilsey is the most "expressive" guitar player on my list. (An original member of Chris Isaak's backing band Silvertone, providing sublime guitar tones (Stratocaster mainly) to complement Isaak's voice).

The man inspired me in part to learn guitar and own a Stratocaster.

I'll not name names but many of the new guitarists are so easy to copy, the songs are SO easy.
That makes it simple to play more current songs that everyone likes (flavor of the week)

Adrian Smith and Dave Murray are the reason why I picked up the guitar in the '80s. They're still my favorite (Adrian first).

Mine have changed over the years. Never was an electric musician....Always a "roots" acoustic guy.
Had a brief flirtation with a solid-body back in the 80s, mostly for blues.
I liked:
Clapton
Knopfler
King (both BB and Albert)
Sundry other folks in the same vein.

Then I went back to acoustic until quite recently when I started playing fingerstyle jazz.

So now....
Joe Pass
Earl Klugh
Herb Ellis
And various other fingerstyle jazz guys.
