Tabasco and butter basted Cornish hens on a bed of dirty rice with andouille sausage, home made crescent rolls, with a orange cucumber salad. Dressing is of course my own.

Before I got ill I used to ejoy cooking mostly Mediterranean dishes. My favourite was a Greek lamb stew :

Thick cut lamb steaks marinated in lemon juice and olive oil with mild chilli for at least 12 hours.

Slice salted aubergine, onions, sweet peppers and potatoes in alternate levels add garlic, carrots, parsnip, black or green olives, feta, and Italian peeled tomatoes to fill a Schlemmertopf (a sort of lldded Chicken brick) nearly up to the top. Add ni vegetable and lamb stock,

Cook in oven lid on for about three hours at about 180. then turn up to 200
and add in lamb steaks and mushrooms on top and return to oven with no lid until outside of lamb is "just" cooked and inside is rare.

Serve with Tzatsiki.

I also occasionally make Klefiko with half a leg of lamb - and roast veggies. these meals take a long cooking time.

The secret of good Mediterranean stews is that it is mainly about the vegetables with the meat as a fine addition.

In fact as it is a peasant dish any winter vegetables can be used - nowadays as I can't eat normal potatoes any more I'd replace them with squash and sweet potatoes - not very Greek but palatable.

My wife makes a great dish with smoked haddock.

Sadly because of recent events - our dishes have changed radically, but Jane makes soft vegetables for me every night, which is becoming easier for me to swallow day by day.

Me too.

I had a microwave dinner and it was really good. Followed that up with Pringles for dessert.

Default Superbowl Dinner

Spicy 5-bean chili with all the fixin's, chips and beers.

Dark Chocolate molten cake with raspberries, DQ soft serve Ice cream, and 10-yr Tawny port for half-time dessert.

Hope the game is half as good.

Last night it was yummy pork roast with mashed potatoes and gravy and mixed veggies.

Tonight for the Superbowl it'll be fajitas!

For the Super Bowl, my wife is making a crock pot of BBQ hamburgers, which will be really really good.

Along with tons of snacks.

last night I made a 6 egg frittata with sauteed shallots, broccoli rabe, arugula, diced red potato, and feta cheese. We had it with a mixed green salad.

Tonight I'll make a lentil soup.

Lobster Rolls (hopefully) to celebrate the Super Bowl. If not in celebration, in fun.
