I'm eating more kale these days, but only as fresh salads ordered in restaurants. Haven't bought any to prep at home.

Kale is heaven compared to endive...at least the way my Belgian grandmother served it. But both can be bitter if the leaves aren't young and tender...and as someone mentioned, removing the ribs helps. My "opoe" would pluck endive (she pronounced it ON-deev, not IN-dive) right out of the truck garden, often picking large leaves that were tough and scratchy--with weedlike sharp edges--as well as bitter. She served it only raw, too, so I hated the stuff when I was little. I was in my 30s before I learned it didn't have to taste that way...and now, oddly enough, I like fresh young endive just fine.

Whatever you do avoid the new McDonald's Kale / chicken salad. I read today that after you add the dressing it has more fat, calories, and sodium than a double big mac!

I'm going to make a kale, canolini (sp) bean salad for lunch today, but the dressing will be olive oil with lemon juice and garlic.

My wife makes a terrific soup with kale as a basic ingredient. Other ingredients include butternut squash, cannoli and black beans, smoked chicken sausage or andouille depending on her creative itch, and whatever she sautees the kale with. She makes it different every time and does it at least once a month. The kale loses any bitterness it might have otherwise brought into the soup, and retains just enough crunch to let you know you're getting some nutrition. And, as with everything eaten in Buffalo NY, it goes great with hot sauce. Year round!

It wasn't bad, I'd eat it again. Plus, it's a good way to get raw garlic and olive oil in my diet too...

Giada de Laurentis has a recipe for farfalle pasta with Italian sausage and kale that's really good, and I'm not a huge kale fan. The wife made kale chips once, and I thought they might be good for scrubbing pots.

Kale is icky. I tried to like it...tried to make it in different ways. I decided it wasn't for me. So, I eat other greens. Here is a list of "super foods" healthier than kale:

Way back in history people tossed out the beet and only ate the greens. Funny how some things get turned around. I like to make beet tea out of the greens. Tim - not so much.
