Default I'm trying to add kale to my diet

What are your favorite recipes using fresh kale?

I add it to soups. Not the canned crap. A big old pot of soup made from scratch.

We eat a lot of spinach and kale just thrown into about everything. Take some of your favorite recipes and just add it. Just give it a try!

What does it do that other green vegetables don't? Ate it a lot when I was a kid, always thought it was nasty.

I'm with you buddy. I've been a city slicker for a long time now, but I grew up on a farm in Scotland.
We had acres of the stuff, strictly cattle food.

I do like JJ Cale and some of John Cale's early work.

My friend has made kale this way a couple of times when I've eaten at his house, very simple:

Wash the kale well, cut it up but not too small. Pile it all in a large skillet, put a few cloves of garlic, either crushed or chopped, add a bunch of olive oil and cook it down, stirring and turning it over every now and then. Probably takes about 15 minutes, it's delicious, and the kale doesn't get limp but stays pretty crisp.

Put a whole bundle of it in a tall pan, put a little water in the bottom of the pan, get that bit of water simmering, and then leave the kale to soften by steaming for 10-15 minutes or so. That's all I do; then add it to whatever else we're eating. I find it works well with fried ground beef and tomatoes.

I like spinach ...even canned. eat it with vinagar. Never ate kale as far as I know. But then.... I have eaten mysterious foods in Taiwan. So who knows.

Default Spinach

Don't care for the taste of kale, so I don't eat it, but fresh spinach can be chopped and used often. Goes with almost anything.

Kale is one of healthiest foods you can eat. That said, raw it does tend to have a bitter taste particularly the longer it grows. So raw we add it sparingly to salads along with spinach onions etc. Cooked it can made much more palatable my for example wife layers it into her lasagna

Thumbs up kale "chips"

Here's one my daughter makes...

chop up the kale into bite size squares

layer on cookie sheet
sprinkle with garlic salt
bake at 250* until crisp

Surprisingly tasty!

By all accounts I have read, the nutritional benefits warrant eating it, enjoy it or not.
Low heat, sauté onions and garlic, add the chopped kale.
I put a lid on to sorta steam it a bit.
I also add spinach or whatever is on hand to the mix.
Like exercise, I dont love it, but I do it cuz of its subsequent benefits...same with kale.

I use it a lot in soups. Indistinguishable from spinach (although spinach in a soup often practically "disappears").
