Audacity ....free, robust, and pretty easy to use as well. (If it weren't easy I wouldn't be able to use it )

Default Audacity Yes

+2 Audacity
This is what I started with and have stuck with. It's easy and pretty powerful. I'm using the current beta version and haven't had any problems.

I'm also toying with Reaper but it's much more complicated - and probably more powerful, too - but I haven't put in the time to get the hang of it.

Reaper really is free in a way in that after the grace period it still functions fully but forces you to "contemplate" a donation for 6 seconds or so before opening. For a non-commercial license it's only $50.00 which isn't bad, and if I get to using it and like it, I'd probably pay it just because it's for a good cause, i.e. as jack Black says, "Sticking it to da man!".

I've been using the "zoom H2" either as a stand alone recorder, or as a USB microphone.

Default M-Audio Fast track Pro

I've electrified my '74 Guild D50 with an undersaddle pickup (it's now in hte shop to get a B-Band A2.2 installed) and have recorded it into Audacity through an M-Audio Fasttrack Pro. I usually only use my old Shure mic for vocals but have also used that for one un-amplified guitar. The M-Audio's channel that allows connecting a mic is for some reason quiter than the instrument channel so I've not had the greatest success with recording the guitar that way.

The FastTrack has some problems with Win XP Media Center edition so if you have that system I don't think I'd recommend it. Otherwise it does what it says it'll do.

I use an Acme-1 from a language CD I had. Low end, but not bad audio.

There is a ton of free music software. My web site includes a huge list of such software, including recorders...

A couple of others: wavepad, wavosaur, mu.lab, etc

Just wanted to make sure the OP knows that Reaper, can be free if you choose. The software will continue forever, but buying a license is encouraged by the creators of it (obviously). But if you decide you want to go on using it for free, you can. It's actually a pretty full featured DAW software and it's not unheard of to hear about people actually switching from DAWs like Pro Tools and moving over to Reaper because they actually like it better.

I am using a RODE NT 1 A, which (not only) in my opinion is excellent though lowpriced. Short: I love it. For the guitar I just bought a K&K System (Pickup, Undersaddle Piezo and an extern Amplifier), which is said to create the most natural sound from an acoustic guitar. And the soundfiles I heard, impressed me. But I don't have it yet in my hands. If you like, I post soundfiles, once I have got it.
For recording I use Ardour which is an excellent Pro-like Software, which is free, though the Volunteers behind ask for a donation to be able to continue their work. http://ardour.org/ for download. But there is no windows version - you can choose between OS-X and Linux systems like Ubuntu, which is my favourite and absolutely free, too. Anyway I switched completely from windows to Ubuntu, because I like it much better and because it is faster and safer and better scalable to my needs in many points.
For recording I use a Tascam US-122L. Though there is no official driver for Linux, I got it easily to work with the help of the community behind Ubuntu and with Federico, who is making sure, that with next edition of Ubuntu (comes in April and is for free too) the driver will be installed by default, which means Plug and Play.
I am very happy with this combination and Ardour is excellent in my opinion.
